Healthy Lunch - Soba Noodle Salad

I love food. All of it. From the gooeyist, cheesiest pizza to a crisp salad on a summer day. So, I try to strike a balance between treatful and healthy. 
That said...I work from home. Anyone that works from home has experienced the siren song of the cookie jar. It's a real thing! In order to resist temptation, I schedule my lunches, just as I would in an office environment, and I take a break to cook up a meal that is easy to make and yummy.
This soba noodle salad is one of my favorites. I use whatever veggies I have on hand. And if I'm out of soba noodles, I'll use rice noodles. Or udon noodles. Or whatever is in the pantry. 
  • 2-3 ounces soba noodles 
  • Handful of spinach, chopped
  • 1 carrot, grated
  • 1-2 green onions, trimmed and sliced
  • 2 tablespoons peanut butter
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 lime wedge

First, start your water boiling.  Prep your veggies while waiting for the water to roll. 
I use a small pot (since I'm just cooking this for myself) but once the first half of the noodles wilt, it's simple to stir the rest in. 

Cook the soba noodles according to directions, which is typically about 3 minutes.

While the noodles are cooking, make your sauce. Combine peanut butter, sesame oil, and soy sauce in whatever container you have handy. I like to use a measuring cup, simply because it's easier to pour over my noodles later.

Once cooked, drain the noodles, rinse with cold water, then drain again. Combine your soba noodles and your veggies. Pour your dressing over the top and toss. Then, give it a squeeze of lime.

Yum!  Lunch!
